The Traditional Couscous with vegetables Recipe

Couscous is a very famous dish in North Africa especially Algeria, Morocco. There are several recipes online but they are not the real traditional recipe. In the original recipe used in these countries, the couscous should be steamed three times. It doesn't add much time to your active prep work, but you will need a couscoussier or other large pot fitted with a steam basket if you don't have one check this one from amazon.

you can use instant couscous, but the texture won't be the same.


let's get started.

There are different recipes for couscous. Most recipes add broth on top but this one does not have one. It only has vegetables in it. and it's originally vegan.

let's get started

-Put water in the bottom pot and let it boil.



-wash your couscous with water and drain it then let it dry.




-after it dries roll and rub the couscous with your hands for a good minute or two, making sure there are no balls or clumps.

-Transfer the couscous to a lightly oiled steamer basket, taking care not to compress the grains in the process. -Place the basket on the couscoussier and steam for 15 to 20 minutes, until you see steam appears over the couscous. we are done with the first round of steaming.



Turn the couscous back into your bowl. Allow it to cool briefly, Add salt, 1/4 cup of oil, and add 1 cup of water Toss and roll the couscous around between your hands for a minute to distribute the oil evenly and break up any balls or clumps. (You may need to use a wooden spoon if the couscous is too hot, but move to use your hands when it has cooled enough.) Let it sit for 10 minutes to absorb the added Water.

-Transfer the couscous back to the steamer for the second Steaming round. taking care not to compress or pack the grains. Steam for 15 to 20 minutes, timing from when you first see steam emerge from the couscous.

-Repeat the steaming process, in the same way, one more time. adding just water and tossing it with hands or wooden spoon if it's hot then steam it again for 15/20 minutes and you're done. (3 round of steaming in total)

now let's move to the vegetables




-cut 3 onion, 2 zucchini, 1 potato, green beans, 2 carrots, and peas into small cubes, add some salt and steam them until cooked.



-add your cooked vegetables to the couscous mix it gently add a good amount of olive oil, and voila the best couscous you will ever eat.
